Personally I haven't heard of or seen a gingerbread woman cookie/biscuit. Last week first time I heard of it from my 7 yrs old nieces, when I gave her a gingerbread man and few other cookie cutter (3D Printed) she asked me if i could make her a woman/girl version. I was clueless about about it looks so i asked her to draw me a picture, she her picture in photo section. So design credit goes to her.
Did google few min back, looks like the gingerbread woman/girl cookie cutter isn't that uncommon as i was thinking. :)
