how much infill would you put on these?

I do not own a 3d printer myself, so I am not an expert on printing details. I had these printed by a service company, but I don't know the specifics. I would say: as dense as possible, given that factory-made, injection-molded boomerangs are made from solid polypropylene or ABS.

Exactly what can I print this with? LOL to big for my largest printer Prusa MK2S

You can scale it down if needed. I have had a boomerang printed on a Makerbot 2 which has a print area of 6 x 11 inches or thereabouts. Surprisingly, the resulting boomerang is a good flyer. With the Prusa, you should be fine.
