What sort of silicone do you recommend, the type I am using isnt setting as the mold is reasonably air tight. Are you using an addition cured/two part mix silicone?

Tin casting Silicone doesn't need air to cure, it is a two component material. If you use correct measurements it will cure under basically all circumstances. Low temperatures will prolong curing, higher ones will speed it up.

cures in about 2 h at roomtemperature and in 1:20h @ 100°C
If for some reason you want to use the high temperature silicone glue you get in the diy market you will need to expose it to air throughly before molding. It will stick to the surface of the mold very tightly so make sure to use PTFE spray or vaseline as a separation agent.
I would heavily recommend using the two component stuff that is meant for molding, it has a much higher viscosity.
