A pair of cutters to make my take on the Jammie Dodger!
Recently I had my blackberry bush finally give edible fruit, so much infact I decided to make some jam. I have never made jam before and my first batch was rather... thick. It wasn't any use for spreading on toast, but I did notice that it is a similar consistancy to the jam used in Jammie Dodgers. So with a shortbread recipe I made my own with these cutters.
Recipe for Shortbread:
75g Caster Sugar
250g Plain Flour
Cream the butter with the caster sugar, then follow with the plain flour. Work together into a ball, wrap dough in food wrap and place in fridge for 30 mins or freezer for 10-15.
Flour your work surface and then take out dough and roll to approx 5-6mm thick. Dip the end of each cutter in flour before cutting out the shapes, make sure you have the same number of tops and bottoms!
The tops will need to have the middle bit removed before placing them onto a baking sheet and into the oven at 150C for 25 minutes.
Once cooked take out the oven and transfer to a cooling rack. Allow to cool. When they are cold take the bottom piece and turn it so the flat side is facing up and put some jam on it, spreading it out. Then place a top piece on the jam. If you have jam (like me) that is too firm then heat it briefly in a microwave to soften it before putting on biscuit. Shop brought will work just as well :)
