Although it's easy to measure which nuts and bolts I'll, could you still list them all? Also, what springs did you use and where did you get them? Thanks for converting this to metric!

For the three leveling screws, I used M5 low-profile screws like these (pretty sure these use 2.5mm hex keys rather than the normal 3mm used for M5 bolts:

I also used three nylon locking nuts to keep the M5's in place.

I re-used the 4 short M3 screws from the original plate. Then there are two 10mm M3 bolts with regular nuts that attach the middle and bottom parts.

I'm currently working on redesigning the center mounting bolt to be metric, since I didn't have any bolts/nuts larger than M5.

For the springs, I believe a picked up a variety package of springs from home depot and picked three that gave moderate resistance:

I think I found a bolt that you can use for the center mounting bolt:

It's a 30mm M6 "tap bolt".

I just pulled out the callipers and measured the center mounting bolt. The one I used was a 1/4 inch hex bolt and nut. The length is between 1 and 1-1/4 inch. Like this one:

Not sure if you can find a metric hex bolt, but if you can, there might be one with a similar size that would work.

Also wanted to note that the holes for the three M5 leveling bolts have a lot of space in them and you'll want to make sure you tighten the lock nuts with the bolt centered in the hole (if you decide to use lock nuts).
